A Guide to Classic Custard Tarts

Custard tarts, with their buttery crust and velvety egg filling, are a beloved dessert. Here’s a simple guide to making them at home.

Ingredients: For the pastry, you’ll need 200g all-purpose flour, 100g cold butter (cubed), 1 egg yolk, and 2 tbsp cold water. For the custard, mix 300ml milk, 200ml heavy cream, 3 eggs, 60g sugar, and 1 tsp vanilla extract.

Steps:

1. Make the crust: Rub cold butter into flour until crumbly. Add egg yolk and water, knead into a smooth dough. Chill for 30 minutes, then roll out and press into a tart tin. Blind bake at 180°C (350°F) for 15 minutes.

2. Prepare the custard: Whisk eggs, sugar, and vanilla. Gradually add milk and cream, strain the mixture.

3. Assemble and bake: Pour custard into the pre-baked crust. Bake at 160°C (325°F) for 25–30 minutes until set. Cool before serving.

Tips: For a richer flavor, sprinkle nutmeg on top. Enjoy these tarts warm or cold—they’re perfect with a cup of tea!
