Ingredients: 2 lbs oxtail (cut into 3-inch pieces), 2 tbsp cooking oil, 1 onion (chopped), 3 garlic cloves (minced), 1 ginger slice (smashed), 3 tbsp soy sauce, 2 tbsp Shaoxing wine, 1 tbsp sugar, 5-star spices (2), cinnamon stick (1), hot water (enough to cover), and salt to taste.

Steps:

1. Prepare the oxtail: Rinse and pat dry. Blanch in boiling water for 5 minutes to remove impurities; drain and rinse.

2. Sear the meat: Heat oil in a pot over medium-high. Add oxtail and sear until browned on all sides. Remove and set aside.
