- 1 fresh lotus root (thinly sliced into rounds, 1/8-inch thick)

- 200g ground pork (or a mix of pork and shrimp)

- 2 tbsp soy sauce, 1 tsp sesame oil, 1 ginger (minced), 1 green onion (chopped)

- 1 egg (for binding), 2 tbsp starch, Salt and pepper to taste

- Oil for frying, Toothpicks

Steps:

1. Prepare the Filling: Mix ground pork with soy sauce, sesame oil, ginger, green onion, egg, starch, salt, and pepper. Stir until sticky; set aside.

2. Assemble the Boxes: Lay two lotus root slices slightly overlapping. Place a spoonful of filling in the center, top with another slice, and secure edges with toothpicks to form a "box." Repeat for all.

3. Fry Until Golden: Heat oil in a wok (350°F/175°C). Fry lotus root boxes in batches for 3–4 minutes per side, until deep golden and crispy. Drain on paper towels.

4. Serve: Best hot with a sweet-and-sour dipping sauce or chili oil.
