How to Cook Stir-Fried Crab with Ginger and Scallions

Stir-fried crab with ginger and scallions is a classic Cantonese dish, celebrated for its fresh, briny flavor and aromatic, savory notes. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients:

- 1 live crab (around 500g, cleaned and cut into pieces)

- 3 tbsp vegetable oil

- 4 sliced garlic cloves

- 2 tbsp minced ginger

- 3 chopped scallions (white and green parts separated)

- 1 tbsp soy sauce

- 1 tsp oyster sauce

- ½ tsp sugar

- 1 tsp Shaoxing wine (optional)

- White pepper to taste

- Sesame oil (for finishing)

Steps:

1. Prep the Crab: Clean the crab thoroughly, remove the gills, and cut into large pieces. Pat dry with paper towels to ensure a crispy stir-fry.

2. Heat the Wok: Heat oil in a wok or large skillet over high heat until smoking. Add ginger and garlic, stir-fry for 10 seconds until fragrant.

3. Stir-Fry the Crab: Add crab pieces, stir-fry for 3-4 minutes until the shells turn red. Pour in Shaoxing wine (if using) and cook off the alcohol.

4. Season: Add soy sauce, oyster sauce, sugar, and white pepper. Toss well to coat the crab evenly.

5. Finish and Serve: Toss in the white parts of the scallions, stir-fry for 1 minute, then add the green parts. Drizzle with sesame oil, give a final toss, and transfer to a plate. Serve hot with steamed rice.

This dish highlights the crab’s natural sweetness, balanced by the warmth of ginger and the freshness of scallions. Enjoy the perfect harmony of textures and flavors!
