How to Make Hearty Radish and Lamb Soup

Radish and lamb soup is a nourishing and aromatic dish, perfect for cold weather. Here’s a simple yet delicious recipe to guide you.

Ingredients:

500g lamb (preferably with bones for richer broth), 1 large white radish, 3-4 ginger slices, 5 garlic cloves, 1 green onion, 1 tsp Sichuan peppercorns, salt, and a pinch of white pepper.

Steps:

1. Prep the Lamb: Rinse the lamb, cut into 2-inch pieces, and blanch in boiling water for 3 minutes to remove impurities. Drain and set aside.

2. Cook the Broth: In a pot, add lamb, ginger, garlic, peppercorns, and 6 cups of water. Bring to a boil, then simmer on low heat for 1.5 hours until the lamb is tender.

3. Add Radish: Peel and dice the radish into 1-inch cubes. Add to the pot and cook for 20-30 minutes until the radish turns translucent and soft.

4. Season: Skim off any excess oil. Add salt, white pepper, and chopped green onion. Adjust seasoning to taste. Simmer for 5 more minutes.

Serving Tips:

Serve hot with steamed rice or crusty bread. The soup’s warm, savory flavor pairs well with a dash of chili oil for extra heat. Enjoy this comforting meal that warms both body and soul!
