How to Make Spicy Chicken Stir-fry (Shuangjiao Jiding)

Spicy Chicken Stir-fry, or *Shuangjiao Jiding*, is a beloved Sichuan dish known for its tender chicken, crisp vegetables, and bold flavors. Here’s a simple guide to making it at home.

Ingredients: 300g chicken breast (diced), 2-3 green Sichuan peppers (sliced), 2-3 dried red chilies (broken), 1 tbsp soy sauce, 1 tsp Shaoxing wine, 1 tsp sugar, 1/2 tsp starch, 2 tbsp oil, 1 sliced garlic, a pinch of Sichuan peppercorn powder.

Steps:

1. Marinate the chicken: In a bowl, mix diced chicken with soy sauce, Shaoxing wine, sugar, and starch. Let it sit for 15 minutes to tenderize.

2. Heat the wok: Add oil over medium-high heat. Stir-fry garlic until fragrant, then add dried red chilies and green Sichuan peppers. Sauté briefly to release their aroma (avoid burning).

3. Cook the chicken: Add marinated chicken to the wok. Stir-fry for 3-4 minutes until the chicken turns golden and cooked through.

4. Season and finish: Sprinkle Sichuan peppercorn powder for a numbing kick. Toss everything well, then serve hot with steamed rice.

Tips: For extra heat, increase red chilies; for milder flavor, remove seeds. Customize with veggies like bell peppers or onions. Enjoy this fiery, flavorful dish that balances spice, aroma, and tenderness!
