How to Make Homemade Marshmallow Candy: A Step-by-Step Guide

Homemade marshmallow candy, or nougat, is a delightful treat that’s surprisingly easy to make with just a few ingredients. Here’s a simple guide to create chewy, sweet nougat in your own kitchen.

Ingredients: You’ll need 200g granulated sugar, 60g honey, 60g milk powder, 40g butter, and a pinch of salt. Optional additions include chopped nuts (almonds, peanuts), dried fruits (cranberries, raisins), or cocoa powder for flavor.

Steps:

1. Prep the Base: Grease a rectangular tin and line it with parchment paper. Mix milk powder with nuts or dried fruits (if using) and set aside.

2. Cook the Syrup: In a saucepan, combine sugar, honey, and salt. Heat over medium flame, stirring until the sugar dissolves. Boil without stirring until it reaches 150°C (hard-ball stage) on a candy thermometer.

3. Combine Ingredients: Remove the syrup from heat and quickly beat in the butter until melted. Gradually fold in the milk powder mixture, working fast to prevent the syrup from hardening.

4. Set and Cut: Pour the mixture into the prepared tin, pressing it down firmly. Let it cool at room temperature for 2–3 hours, then refrigerate for 1 hour to firm up.

5. Serve: Cut into small squares and wrap each piece in wax paper for storage.

Tips: For a softer texture, cook the syrup to 145°C. Add vanilla extract or melted chocolate for extra flavor. Store in an airtight container for up to two weeks.
