How to Cook Steamed Wuchang Fish with Soy Sauce Sauce

Wuchang Fish, a famous freshwater delicacy from Hubei Province, is prized for its tender flesh and delicate flavor. The classic preparation, "Steamed Wuchang Fish with Soy Sauce Sauce" (红烧武昌鱼), highlights its natural taste with a savory-sweet sauce. Here’s a simple guide to recreate this dish at home.

Ingredients: 1 fresh Wuchang Fish (about 1 kg), 3 slices of ginger, 2 scallions (chopped), 3 tbsp soy sauce, 2 tbsp sugar, 1 tbsp cooking wine, 1 tsp vinegar, 4 tbsp oil, and optional chili for heat.

Steps:

1. Prepare the Fish: Clean the fish, score both sides diagonally, and marinate with 1 tbsp soy sauce, cooking wine, and ginger slices for 15 minutes.

2. Steam: Place the fish on a heatproof dish. Steam over high heat for 8–10 minutes until the flesh is opaque and flakes easily.

3. Make the Sauce: Heat oil in a pan. Sauté ginger and scallions until fragrant. Add soy sauce, sugar, vinegar, and 100ml water. Simmer for 2 minutes until slightly thickened.

4. Finish: Pour the hot sauce over the steamed fish. Garnish with extra chopped scallions or chili.
