Ingredients: 500g beef brisket, cut into 2-inch cubes; 2 large potatoes, peeled and diced; 3 ripe tomatoes, chopped; 1 onion, sliced; 3 garlic cloves, minced; 1 tbsp tomato paste; 500ml beef broth; 2 bay leaves; 1 tsp dried thyme; Salt and pepper to taste; 2 tbsp oil for searing.

Steps:

1. Sear the Beef: Heat oil in a large pot over medium-high heat. Add beef cubes and sear until browned on all sides. Remove and set aside.
