Almond biscotti, a crunchy Italian treat, pairs perfectly with coffee or tea. Here’s a simple recipe to bake these golden, nutty delights at home.
Ingredients:
- 2 cups all-purpose flour
- 1 cup sugar
- 3 large eggs
- 1 cup whole almonds, toasted and chopped
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Steps:
1. Preheat & Prep: Heat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix Dry Ingredients: In a bowl, whisk flour, sugar, baking powder, and salt.
3. Combine Wet Ingredients: In another bowl, beat eggs and vanilla until frothy. Pour the wet mix into the dry ingredients, stirring until a dough forms. Fold in almonds.
4. Shape the Log: Divide dough into two. On the baking sheet, form each half into a 12-inch log, 2 inches wide.
5. First Bake: Bake for 25–30 minutes until golden. Cool for 10 minutes.
6. Slice & Second Bake: Reduce oven to 300°F (150°C). Slice logs into ½-inch thick diagonals. Arrange slices on the sheet and bake for 15–20 minutes, flipping once, until crisp.
Storage: Let cool completely, then store in an airtight container for up to 2 weeks. Enjoy these crunchy, almond-filled biscotti with your favorite beverage!
