How to Make Tomato and Dough Drop Soup

Tomato and dough drop soup, or "xihongshi ge da tang" in Chinese, is a comforting, one-pot dish blending tangy tomatoes with soft, fluffy dough drops. Here’s a simple yet delicious recipe to try.

Ingredients: 2 ripe tomatoes (diced), 1 cup all-purpose flour, 2 eggs (optional), 3 cups broth (chicken or vegetable), 1 tbsp cooking oil, 2 minced garlic cloves, salt, pepper, and chopped green onions for garnish.

Steps:

1. Prepare the broth: Sauté garlic in oil until fragrant. Add diced tomatoes, cook for 3 minutes until softened, then pour in broth. Bring to a simmer.

2. Make the dough: In a bowl, mix flour with a pinch of salt. Gradually add water (or egg + water) while stirring until a thick, sticky batter forms (like thick yogurt).

3. Cook the dough drops: With a wet spoon or piping bag, drop small batter balls into the simmering broth. Cook for 5-7 minutes until they float and puff up.

4. Season: Add salt, pepper, and a drizzle of sesame oil. Simmer for 2 more minutes. Garnish with green onions.

Serve hot as a light meal or a starter. The soup’s vibrant flavor and tender dough make it a family favorite!
