Spicy tofu shreds (炝拌豆腐丝) is a popular Chinese appetizer known for its tender texture, bold flavors, and simplicity. Here’s a basic guide to making this delicious dish at home.

Ingredients:

- 200g dried tofu shreds (rehydrated in warm water for 15 mins, then squeezed dry)

- 2 cloves garlic (minced)

- 1 red chili (sliced, seeds removed for less heat)

- 1 scallion (chopped)

- 1 tbsp soy sauce

- 1 tsp black vinegar

- ½ tsp sugar

- 2 tbsp cooking oil

- Sesame oil (a few drops, optional)

- Salt to taste

Steps:

1. Prepare the tofu shreds: Rehydrate dried tofu shreds until soft, then drain and squeeze out excess water. Cut into manageable lengths if needed.

2. Blanch (optional): For extra tenderness, blanch shreds in boiling water for 30 seconds, then rinse under cold water and drain.

3. Make the sauce: In a bowl, mix soy sauce, black vinegar, sugar, and salt. Set aside.

4. Sauté aromatics: Heat cooking oil in a wok over medium-low heat. Add minced garlic and chili slices, stir-fry until fragrant (about 30 seconds). Be careful not to burn the garlic.

5. Combine: Place tofu shreds in a bowl, pour the hot oil mixture over them, and toss well. Add the sauce and scallions, mix thoroughly.

6. Serve: Drizzle with sesame oil, garnish with extra scallions if desired. Serve chilled or at room temperature.

Tips:

- For a richer flavor, use toasted sesame oil instead of regular cooking oil.
