Ingredients: 1 bitter melon, 1 block firm tofu, 50g ground pork, 2 shiitake mushrooms (minced), 1 tsp soy sauce, 1/2 tsp sugar, salt, pepper, and cornstarch.
Steps:
1. Prepare the bitter melon: Wash and cut it into 3-4 cm rings. Remove seeds and gently scrape the inner white pulp to reduce bitterness. Blanch in boiling salted water for 2 minutes, then soak in ice water to retain color. Drain and pat dry.
