Shitake vegetable buns are a healthy and flavorful treat, perfect for breakfast or a light meal. Here’s a simple guide to making them at home.
Ingredients: For the dough, you’ll need 300g all-purpose flour, 3g yeast, 15g sugar, 150ml warm water, and a pinch of salt. For the filling, prepare 200g shitake mushrooms (finely chopped), 100g cabbage (shredded), 1 carrot (grated), 2 green onions (chopped), 1 tbsp soy sauce, 1 tsp sesame oil, salt, and pepper to taste.
Steps:
1. Make the dough: Mix flour, yeast, sugar, and salt. Gradually add warm water and knead into a smooth dough. Let it rise in a warm place for 1 hour until doubled in size.
2. Prepare the filling: Sauté shitake mushrooms until tender. Add cabbage, carrot, and green onions, cook for 3 minutes. Season with soy sauce, sesame oil, salt, and pepper. Let cool.
3. Shape the buns: Punch down the dough and divide into small balls. Roll each into a circle, place a spoonful of filling in the center, and pinch the edges to seal.
4. Steam: Place buns on a parchment-lined steamer. Let them rest for 15 minutes, then steam over medium heat for 15-20 minutes.
Serve hot and enjoy these savory, umami-packed buns! They’re best eaten fresh but can be stored frozen for later.
