How to Make Chinese Radish Cake (Lo Bak Go)

Radish cake, or "Lo Bak Go," is a beloved Cantonese dim sum dish with a savory, slightly sweet flavor and a tender yet chewy texture. Here’s a simple guide to making it at home.

Ingredients:

- 500g white radish, grated and squeezed dry

- 200g Chinese sausage (lap cheong), diced

- 100g dried shrimp, soaked and chopped

- 150g rice flour

- 50g tapioca flour

- 500ml water or stock

- Salt, white pepper, and five-spice powder to taste

- 2 tbsp cooking oil

Steps:

1. Prepare the batter: Mix rice flour, tapioca flour, water/stock, salt, pepper, and five-spice powder until smooth. Let it rest for 15 minutes.

2. Sauté the aromatics: Heat oil in a pan, stir-fry Chinese sausage and dried shrimp until fragrant. Add grated radish, cook for 5 minutes until softened.

3. Combine: Pour the batter into the radish mixture, stir well over low heat until thickened (about 5-7 minutes).

4. Steam: Pour the mixture into a greased baking tray. Steam over high heat for 40-50 minutes, or until a toothpick comes out clean.

5. Pan-fry (optional): Cool the cake, slice it, and pan-fry in oil until golden on both sides for a crispy exterior.

Serve hot with chili sauce or light soy sauce. This versatile dish is perfect for breakfast or as a snack, offering a comforting blend of textures and flavors!
