Crafting a rich, velvety chocolate mousse cake is simpler than it seems! This recipe yields a 6-inch cake, perfect for 6–8 servings.
Ingredients:
For the chocolate sponge cake: 4 eggs, 80g sugar, 60g flour, 20g cocoa powder.
For the mousse: 200g dark chocolate (melted), 300ml heavy cream, 3 eggs (separated), 50g sugar.
Steps:
1. Prepare the sponge base: Whisk egg yolks with 30g sugar until thick. In another bowl, beat egg whites with 20g sugar to stiff peaks. Fold in flour and cocoa powder, then gently mix in the yolk mixture. Pour into a 6-inch springform pan and bake at 180°C for 20 minutes. Let cool.
2. Make the mousse: Melt chocolate and let cool slightly. Whip cream to soft peaks. In a separate bowl, beat egg yolks with 50g sugar until pale. Gently fold the melted chocolate into the yolks, then fold in the whipped cream. In another bowl, beat egg whites to stiff peaks and fold into the mousse mixture.
3. Assemble: Spread the mousse over the cooled sponge cake. Chill for at least 4 hours (or overnight) until set. Garnish with cocoa powder or chocolate shavings before serving.
Enjoy this indulgent dessert that balances light, airy mousse with a moist chocolate base!
