How to Make Golden Egg Dumplings: A Complete Guide

Golden egg dumplings, or "jindan jiaozi," are a beloved Chinese dish prized for their crispy, golden-brown crust and tender, juicy filling. Mastering this dish is simple with the right technique. Here’s a step-by-step guide.

### Ingredients

For the filling: 200g ground pork (or chicken), 1 tbsp soy sauce, ½ tsp salt, 1 tsp sesame oil, 1 chopped scallion, and a pinch of white pepper. For the wrapper: 2 large eggs, 1 tbsp starch, and a pinch of salt. Oil for frying.

### Steps

1. Prepare the filling: Mix all filling ingredients in a bowl. Set aside.

2. Make the egg wrapper: Whisk eggs with starch and salt until smooth. Heat a non-stick pan over medium-low heat. Pour in 1 tbsp batter, swirling to form a thin circle (about 10cm). Cook for 30 seconds until set, then flip and cook for 10 more seconds. Repeat for more wrappers.

3. Shape the dumplings: Place 1 tsp filling in the center of a wrapper. Fold it into a half-moon, sealing the edge with your fingers or a fork. Trim excess if needed.

4. Fry to perfection: Heat oil in a pan (1cm deep). Fry dumplings over medium heat for 2–3 minutes per side until golden and crispy. Drain on paper towels.

### Serving

Enjoy golden egg dumplings hot, with a dipping sauce of soy sauce and vinegar. They’re perfect as appetizers or a main dish. With practice, you’ll achieve a crispy, golden crust every time!
