Radish cake, a beloved dim sum staple, is a savory, comforting dish enjoyed for its crispy exterior and tender, radish-infused center. Here’s a simple guide to making it at home.
Ingredients:
500g white radish (daikon), grated and squeezed dry
200g rice flour, 50g tapioca flour
200ml water, 100ml vegetable oil
150g Chinese sausage (lap cheong), diced
50 dried shrimp, soaked and chopped
2 shallots, minced
Salt, white pepper, and five-spice powder to taste
Steps:
1. Prepare the Batter: Mix rice flour, tapioca flour, and water in a bowl until smooth. Add the grated radish, minced shallots, diced sausage, dried shrimp, salt, pepper, and five-spice powder. Stir well to combine.
2. Steam the Cake: Pour the batter into a greased baking pan. Steam over high heat for 45–60 minutes until a toothpick inserted comes out clean. Let it cool completely, then cut into 1.5cm thick slices.
3. Pan-Fry to Perfection: Heat oil in a non-stick pan over medium heat. Place radish cake slices in the pan, frying until golden brown on both sides (3–4 minutes per side). For extra crispiness, fry in batches.
Serving Tip: Enjoy it on its own or with a drizzle of light soy sauce and chili sauce. Leftovers can be refrigerated and re-fried for a crispy texture. This versatile dish is perfect as a breakfast, snack, or side dish!
