Spicy chicken necks, a beloved street food snack, are tender, flavorful, and addictive. Here’s a simple yet delicious recipe to make them at home.
Ingredients:
500g fresh chicken necks, cleaned and halved; 3-4 dried chili peppers (adjust to taste); 1 tbsp Sichuan peppercorns; 2 ginger slices; 3 garlic cloves; 2 tbsp soy sauce; 1 tbsp cooking wine; 1 tsp sugar; Salt to taste; Oil for stir-frying; Sesame seeds and chopped cilantro for garnish.
Steps:
1. Marinate the chicken necks with soy sauce, cooking wine, and a pinch of salt for 20 minutes.
2. Heat oil in a wok over medium heat. Sauté ginger, garlic, and dried chilies until fragrant. Add Sichuan peppercorns and stir briefly to release their aroma.
3. Add the marinated chicken necks and stir-fry for 5-7 minutes until golden brown.
4. Pour in 1 cup of water, then simmer for 15-20 minutes, covered, until the chicken is tender and the sauce thickens. Add sugar and adjust saltiness.
5. Garnish with sesame seeds and cilantro before serving. For extra heat, add chili oil!
Tips: For a spicier kick, use more dried chilies or a dash of chili paste. Simmering longer ensures the necks absorb the flavors fully. Enjoy this crunchy, spicy treat as a snack or appetizer!
