Stir-fried loofah with green peas is a simple, healthy, and delicious dish that highlights the fresh flavors of summer. Here’s a step-by-step guide to making it perfectly.

Ingredients:

- 1 medium loofah (about 300g), peeled and cut into 2cm cubes

- 100g fresh green peas (or frozen)

- 2 cloves garlic, minced

- 1 tbsp cooking oil

- 1 tsp light soy sauce

- ½ tsp salt (or to taste)

- A pinch of sugar (optional, to balance flavors)

- 1 tbsp water (if needed)

Instructions:

1. Prep the veggies: Peel the loofah (its skin can be bitter) and cut it into bite-sized cubes. Rinse the green peas. Mince the garlic.

2. Stir-fry the loofah: Heat oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until fragrant (about 10 seconds). Toss in the loofah cubes and stir-fry for 3–4 minutes until they start to soften.
