Fried dough twists, or xiao mahua, are beloved golden-brown snacks with a crispy exterior and tender, slightly sweet interior. Mastering this Chinese classic is simpler than you think—here’s a foolproof recipe.
Ingredients:
- 300g all-purpose flour
- 1 tsp instant yeast
- 30g sugar
- 1 egg
- 150ml warm milk
- 1 tsp salt
- Oil for frying
Steps:
1. Dough Prep: Dissolve yeast and 10g sugar in warm milk. Let sit for 5 minutes until frothy. Mix flour, remaining sugar, salt, and egg in a bowl. Pour in the yeast mixture and knead into a smooth dough. Add 1 tbsp oil and knead until elastic. Cover and let rise for 1 hour until doubled.
2. Shape Twists: Punch down the dough and divide into small balls. Roll each into a 15cm-long strip. Brush with oil, fold in half, and twist tightly. Pinch the ends to seal.
3. Fry to Perfection: Heat oil to 160°C. Fry twists in batches for 3-4 minutes, turning occasionally, until golden and puffed. Drain on paper towels. For extra flavor, sprinkle with a mix of sugar and cinnamon while warm.
Enjoy these crispy, homemade treats with tea or as a snack! Their crunch and aroma make them irresistible.
