How to Make Marble Chiffon Cake: A Step-by-Step Guide

Marble chiffon cake, with its delicate texture and striking swirls, is a beloved dessert. Here’s a simple recipe to create this masterpiece at home.

Ingredients:

- 6 eggs (separated)

- 70g cake flour

- 70g sugar (divided)

- 40g vegetable oil

- 50ml milk

- 1 tsp vanilla extract

- 1 tbsp cocoa powder (for marble effect)

Steps:

1. Prepare Batter: Separate egg yolks and whites. In a bowl, whisk yolks with 30g sugar until pale. Add oil, milk, and vanilla, mixing well. Sift in flour and fold gently until smooth.

2. Whip Egg Whites: In a clean bowl, beat egg whites with 40g sugar until stiff peaks form. Gradually fold the yolk mixture into the whites in three batches, maintaining lightness.

3. Create Marble Effect: Mix 1 tbsp cocoa powder with 1 tsp milk to form a paste. Spoon 1/3 of the batter into a separate bowl, then fold in the cocoa paste. Pour the plain batter into a 17cm tube pan, then drizzle the cocoa batter on top. Gently swirl with a toothpick for a marbled pattern.

4. Bake: Tap the pan on the counter to remove air bubbles. Bake at 160°C for 35-40 minutes. Invert immediately and cool completely before removing from the pan.
