First, select fresh, firm bitter melons. Wash them thoroughly, then slice in half lengthwise. Scoop out the seeds and pith using a spoon—they’re the bitterest parts. Cut the melon into thin half-moons (about 0.5 cm thick) for even cooking.
Next, blanch the slices to reduce bitterness. Bring a pot of water to a boil, add a pinch of salt, and blanch the melon for 2–3 minutes.
