How to Make Homemade Sour and Spicy Rice Noodles

Sour and spicy rice noodles, a beloved Chinese street food, are easy to recreate at home. Here’s a simple guide to achieve the perfect balance of tangy, spicy, and savory flavors.

Ingredients: Rice noodles (200g), peanuts (50g, crushed), scallions (chopped), cilantro (chopped), Sichuan preserved vegetable (zhacai, diced), garlic (minced), chili oil, black vinegar, light soy sauce, chicken powder, and vegetable broth.

Steps:

1. Prepare noodles: Soak rice noodles in warm water for 20 minutes until soft, then blanch in boiling water for 30 seconds. Rinse under cold water and drain.

2. Make the broth: In a bowl, mix 3 tablespoons black vinegar, 2 tablespoons chili oil, 1 tablespoon light soy sauce, 1 teaspoon chicken powder, and 200ml hot vegetable broth. Stir well.
