Ingredients: 2 fresh mackerel (cleaned and gutted), 4 tbsp soy sauce, 2 tbsp sake, 2 tbsp mirin, 1 tbsp sugar, 1 slice of ginger, 1 scallion (cut into chunks), cooking oil.
Steps:
1. Prepare the fish: Score the mackerel diagonally on both sides to help the sauce penetrate. Pat dry with paper towels.
2. Sear the fish: Heat oil in a pan over medium heat. Place the fish skin-side down and sear for 3-4 minutes until crispy. Flip and sear the other side for 2 minutes. Remove and set aside.
