Jujube flower buns, or *zaohua mantou*, are delicate, steamed buns adorned with jujube petals, symbolizing prosperity in Chinese cuisine. Here’s a simple guide to crafting these beautiful treats.
Ingredients:
- 500g all-purpose flour
- 300ml warm water (or milk for softer buns)
- 5g active dry yeast
- 20g sugar
- A pinch of salt
- Red jujubes (pit and slice into thin petal shapes)
- Optional: 1 egg yolk for glazing
Steps:
1. Activate yeast: Mix yeast, sugar, and warm water. Let sit for 10 minutes until frothy.
2. Dough prep: Combine flour and salt in a bowl. Pour in the yeast mixture and knead into a smooth, elastic dough (about 10 minutes). Cover and let rise in a warm place for 1–2 hours until doubled.
3. Shape the buns: Punch down the dough and divide into small balls (50g each). Flatten each ball, place 5–6 jujube petals in the center, and gather the edges, sealing at the bottom to form a round bun with petals exposed on top.
4. Second rise: Place buns on parchment-lined steamer trays. Cover and let rise for 20 minutes.
5. Steam: Bring water to a boil in a steamer. Arrange buns (leaving space between them), cover, and steam on high for 15 minutes. Turn off heat and let sit for 5 minutes before opening.
Tips: For a glossy finish, brush with egg yolk before steaming. Enjoy these soft, slightly sweet buns as a breakfast snack or festive dessert!
