How to Make Lamb Pilaf: A Step-by-Step Guide

Lamb pilaf, a fragrant and hearty Central Asian dish, combines tender meat, fluffy rice, and caramelized vegetables for a satisfying meal. Here’s a simple yet authentic recipe to recreate it at home.

Ingredients:

500g lamb (preferably shoulder, cut into chunks), 2 cups basmati rice, 1 large onion (sliced), 2 carrots (julienned), 3 garlic cloves, 1 tsp cumin, 1 tsp paprika, 100g raisins (optional), 4 cups beef broth, salt, and vegetable oil for frying.

Steps:

1. Prepare the Lamb: Season lamb chunks with salt, cumin, and paprika. Heat oil in a large pot and sear the lamb until browned on all sides. Remove and set aside.

2. Sauté Aromatics: In the same pot, fry onions until golden, then add carrots and cook for 5 minutes. Stir in garlic and raisins (if using) for 1 minute.

3. Cook the Rice: Rinse basmati rice until water runs clear. Add rice to the pot, stirring to coat with oil and spices. Pour in broth, bring to a boil, then reduce heat.
