How to Make Guilinggao: A Complete Guide

Guilinggao, a traditional Chinese herbal jelly, is renowned for its cooling properties and unique, subtly bitter-sweet flavor. Making it at home is simple and requires just a few key ingredients.

First, gather the core components: guilinggao powder (derived from Chinese softshell turtle shells and smilax root), water, and a sweetener like rock sugar or honey. Optional additions include milk for a creamy twist or fruits such as mango or lychee for extra freshness.

To start, mix 2 tablespoons of guilinggao powder with 4 tablespoons of cold water in a bowl, stirring until smooth to avoid lumps. In a saucepan, bring 500ml of water to a boil. Gradually pour the powder mixture into the boiling water while stirring continuously. Reduce heat and simmer for 5–7 minutes until the liquid thickens slightly.
