Ingredients: 200g cured pork belly, 2 potatoes, 1 onion, 2 garlic cloves, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, a pinch of salt, and cooking oil.
Steps:
1. Prep the ingredients: Slice the pork belly into thin strips, about 2cm thick. Peel and cut potatoes into 0.5cm-thick rounds. Soak potato slices in water for 10 minutes to remove excess starch, then drain. Chop onion and garlic.
2. Cook the pork belly: Heat oil in a wok over medium heat. Fry pork belly until golden and slightly crispy, about 3-4 minutes. Remove excess oil, leaving 1 tbsp in the wok.
