How to Make Braised Pork Belly with Potato Slices

Braised pork belly with potato slices is a comforting, hearty dish that balances savory, tender meat with soft, flavorful potatoes. Here’s a simple guide to making it at home.

Ingredients: 200g cured pork belly, 2 potatoes, 1 onion, 2 garlic cloves, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, a pinch of salt, and cooking oil.

Steps:

1. Prep the ingredients: Slice the pork belly into thin strips, about 2cm thick. Peel and cut potatoes into 0.5cm-thick rounds. Soak potato slices in water for 10 minutes to remove excess starch, then drain. Chop onion and garlic.

2. Cook the pork belly: Heat oil in a wok over medium heat. Fry pork belly until golden and slightly crispy, about 3-4 minutes. Remove excess oil, leaving 1 tbsp in the wok.

3. Sauté aromatics: Add onion and garlic, stir-fry until fragrant (30 seconds). Return pork belly to the wok.

4. Simmer: Add soy sauce, oyster sauce, sugar, and 200ml water. Stir well, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.

5. Add potatoes: Place potato slices on top of the pork belly. Do not stir; let them steam in the liquid. Cover and cook for another 10-15 minutes until potatoes are tender.

6. Season: Uncover, increase heat to thicken the sauce slightly. Adjust salt if needed. Serve hot with rice.
