How to Make Pork Stomach and Chicken Soup: A Comprehensive Guide

Pork stomach and chicken soup, a beloved Cantonese delicacy known for its rich flavor and nutritional benefits, is a comforting dish perfect for cold days. Here’s a step-by-step guide to crafting this hearty meal.

Ingredients: 1 whole chicken (about 1.2 kg), 1 cleaned pork stomach, 10 dried scallops, 5 dried red dates, 3 ginger slices, 1 white radish (optional), salt, and pepper.

Steps:

1. Prepare the ingredients: Soak dried scallops and red dates in warm water for 20 minutes. Clean the pork stomach thoroughly with salt and flour, scraping off any impurities, then rinse and cut into bite-sized pieces. Blanch the chicken in boiling water for 5 minutes; remove and rinse.

2. Blanch the pork stomach: Boil water in a pot, add pork stomach, and simmer for 3 minutes. Drain and set aside to remove excess oil and odor.

3. Cook the soup: In a clay pot or deep pot, combine chicken, pork stomach, scallops, red dates, and ginger. Add 2 liters of water, bring to a boil, then reduce heat to low. Simmer for 1.5–2 hours until the meat is tender.

4. Season and serve: Skim off any foam during cooking. Add white radish in the last 30 minutes for a sweeter taste. Season with salt and pepper to taste. Serve hot.

Tips: For a clearer broth, blanch ingredients twice. Soaking dried scallops enhances the umami flavor. Enjoy this nourishing soup with steamed rice for a satisfying meal!
