How to Make Chive and Pork Buns: A Complete Guide

Chive and pork buns, a beloved dim sum classic, are fluffy, savory, and filled with aromatic flavors. Here’s a step-by-step guide to crafting them at home.

### Ingredients

For the dough: 300g all-purpose flour, 2g yeast, 15g sugar, 150ml warm water, 10g vegetable oil.

For the filling: 200g ground pork, 150g chives (finely chopped), 1 tbsp ginger (minced), 2 cloves garlic (minced), 1 tbsp soy sauce, 1 tsp sesame oil, 1/2 tsp white pepper, 1 tsp salt, 1 tbsp cornstarch.

### Steps

1. Prepare the dough: Mix flour, yeast, and sugar. Gradually add warm water and knead into a smooth dough. Add oil and knead until elastic. Let it rise in a warm place for 1 hour, until doubled in size.

2. Make the filling: Combine ground pork, ginger, garlic, soy sauce, sesame oil, white pepper, and salt. Stir in chopped chives and cornstarch. Mix well and set aside.

3. Shape the buns: Punch down the risen dough and divide into 8 equal portions. Roll each into a circle. Place 1-2 tbsp filling in the center, fold the edges, and pleat to seal.

4. Steam: Place buns on parchment-lined steamer trays. Let them rest for 15 minutes to proof. Steam over high heat for 15 minutes. Turn off the heat and let them sit for 5 minutes before serving.

Serve hot with soy sauce or vinegar. These buns are best enjoyed fresh, with a tender crust and juicy, flavorful filling!
