Fried dough twists, or *mahua*, are crispy, golden-brown Chinese snacks loved for their sweet, savory flavor and chewy texture. Making them at home is simple—here’s a step-by-step guide.
Ingredients: All-purpose flour (2 cups), sugar (3 tbsp), salt (1 tsp), baking powder (1 tsp), yeast (1 tsp), warm water (¾ cup), cooking oil (2 tbsp), and sesame oil (1 tbsp) for coating. For a savory twist, replace sugar with salt and cumin powder.
Steps:
1. Dough Prep: Mix flour, sugar, salt, baking powder, and yeast in a bowl. Gradually add warm water and oil, knead into a smooth dough. Cover and let it rise for 1 hour until doubled in size.
2. Shape Twists: Roll the dough into a 1cm-thick rectangle. Cut into 2cm-wide strips. Take two strips, stretch them slightly, and twist them together tightly. Repeat for all dough.
3. Fry: Heat oil in a wok to 160°C (320°F). Gently drop twisted dough into the oil, frying in batches. Fry for 4-5 minutes until golden and puffed, turning occasionally.
4. Finish: Remove with a slotted spoon and drain on paper towels. While warm, brush with sesame oil for extra shine and flavor.
Tips: For crispier twists, fry at a higher temperature (180°C) for a shorter time. Store in an airtight container to maintain crunch. Enjoy as a snack or with tea!
