Ingredients:

- 400g fresh or frozen cherries, pitted

- 2 gelatin sheets (or 1 tsp powder)

- 200ml heavy cream, chilled

- 60g sugar (adjust to taste)

- 1 tsp vanilla extract

- Optional: 2 tbsp cherry liqueur for depth

Steps:

1. Prepare the Cherry Base: Cook cherries with 30g sugar over medium heat until soft (10-15 mins). Mash into a puree, then strain to remove skins. Let cool completely.

2. Bloom Gelatin: Soak gelatin sheets in cold water for 5 mins (if using powder, dissolve in 2 tbsp warm water).

3. Whip Cream: Chill a bowl and beat cream until soft peaks form. Gradually add remaining sugar, then vanilla.

4. Combine Gently: Warm the cherry puree slightly (not hot), dissolve gelatin in it, and fold into the whipped cream. Mix gently to avoid deflating.
