Almond nougat, a sweet and chewy treat loved worldwide, is surprisingly easy to make at home. Follow this simple recipe to create a batch of creamy, nutty goodness.
Ingredients:
- 200g granulated sugar
- 100g honey
- 2 large egg whites
- 150g roasted almonds, roughly chopped
- 50g unsalted butter, softened
- 1 tsp vanilla extract
- A pinch of salt
Steps:
1. Prep: Line a 20x20cm baking tray with parchment paper and spread the almonds evenly.
2. Cook Sugar Syrup: In a saucepan, combine sugar and honey. Heat over medium heat, stirring until the sugar dissolves. Bring to a boil (120°C on a candy thermometer) without stirring.
3. Whip Egg Whites: While the syrup heats, beat egg whites with salt until stiff peaks form.
4. Combine: Gradually pour the hot syrup into the egg whites in a thin stream, whisking constantly. Continue beating for 5-7 minutes until the mixture cools and thickens.
5. Add Butter and Nuts: Gently fold in the softened butter and vanilla extract until smooth. Carefully fold in the almonds.
6. Set: Pour the mixture into the prepared tray, pressing down with a spatula. Refrigerate for 2-3 hours until firm.
7. Cut: Remove from the tray, peel off parchment, and cut into small squares. Store in an airtight container for up to two weeks.
