How to Make Braised Chicken with Mushrooms

Braised chicken with mushrooms is a comforting, flavorful dish perfect for family dinners. Here’s a simple yet delicious recipe to guide you.

Ingredients: 4 chicken legs (drumsticks and thighs), 200g fresh shiitake mushrooms, 1 onion, 3 garlic cloves, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 500ml chicken broth, 2 tbsp cooking oil, salt, and pepper to taste.

Steps:

1. Prep the ingredients: Clean the mushrooms and trim the stems; slice them if large. Pat the chicken legs dry and season with salt and pepper. Chop the onion and mince garlic.

2. Sear the chicken: Heat oil in a pot over medium-high heat. Add chicken legs and sear until golden brown on all sides (about 5-7 minutes). Remove and set aside.

3. Sauté aromatics: In the same pot, sauté onion until translucent, then add garlic and mushrooms. Cook for 3-4 minutes until mushrooms soften.

4. Simmer: Return the chicken to the pot. Add soy sauce, oyster sauce, sugar, and chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until the chicken is tender and the sauce thickens.

5. Serve: Adjust seasoning if needed. Garnish with fresh herbs like parsley or green onions. Serve hot with steamed rice.

Tips: For extra richness, use dried shiitake mushrooms (soaked in warm water until soft) instead of fresh. You can also add carrots or potatoes for more vegetables. Enjoy this hearty, umami-packed meal!
