Scallion Oil Chicken: A Culinary Guide

Scallion oil chicken, a beloved dish across Asia, is celebrated for its tender meat and fragrant, savory sauce. Mastering this recipe is simple, and here’s a comprehensive guide to creating it at home.

Ingredients: 1 whole chicken (about 1.2kg), 8-10 scallions (chopped), 1/2 cup cooking oil, 4-5 cloves garlic (minced), 3 tbsp light soy sauce, 2 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tsp sugar, salt to taste, and ginger slices (for boiling the chicken).

Steps:

1. Prepare the Chicken: Clean the chicken thoroughly. In a large pot, bring water to a boil with ginger and a pinch of salt. Gently submerge the chicken, ensuring it’s fully covered. Simmer over medium-low heat for 30-40 minutes (or until internal temperature reaches 75°C). Remove, rinse under cold water, and let it cool. Pat dry.

2. Make the Scallion Oil Sauce: Heat oil in a pan over low heat. Add minced garlic and chopped scallions (reserve some green parts for garnish), stir-fry until fragrant (2-3 minutes). Remove from heat, then mix in light and dark soy sauce, Shaoxing wine, sugar, and salt.

3. Assemble: Chop the cooled chicken into bite-sized pieces. Arrange on a platter and pour the scallion oil sauce evenly over it. Garnish with reserved scallion greens.
