Ingredients:
- For wrappers: 150g tapioca starch, 50g wheat flour, 150ml boiling water, 1 tsp oil.
- For filling: 200g ground pork (or shrimp/veggies), 1 tbsp soy sauce, 1 tsp sesame oil, 1 chopped shiitake mushroom, 1 tsp ginger, salt, and pepper to taste.
Steps:
1. Make the wrapper: Mix tapioca starch and wheat flour. Gradually add boiling water and oil, stirring until a dough forms. Knead until smooth, then cover and rest for 30 minutes. Roll into a thin log, cut into small pieces, and roll into 8cm circles.
2. Prepare the filling: Combine all filling ingredients in a bowl. Mix well and chill for 15 minutes.
3. Assemble: Place 1 tsp filling in the center of each wrapper. Fold edges into pleats, pinching to seal a small hole at the top (resembling a “money bag”).
4. Cook: Steam for 8–10 minutes over high heat until wrappers turn translucent. Brush with a little sesame oil before serving.
