How to Make Chinese Candied Hawthorn Rolls (Shanzha) at Home

Making tangy, sweet hawthorn rolls (shanzha, or "fruit strips") at home is simple and rewarding. Here’s a step-by-step guide:

First, prepare 500g fresh hawthorn berries. Wash them thoroughly, remove stems, and take out the seeds (or use pre-seeded dried hawthorn for convenience). If fresh, simmer in water for 10–15 minutes until soft; dried hawthorn needs 20–30 minutes of boiling until plump.

Next, mash the cooked hawthorn into a smooth paste using a blender or fork. For extra flavor, add 2 tablespoons of sugar (adjust to taste) and a pinch of salt. If you like, mix in 1 tablespoon of honey or rice vinegar for a tangy twist.

Pour the paste into a non-stick pan and cook over low heat, stirring constantly, until thick (about 10–15 minutes). The mixture should pull away from the pan. Spread it evenly on a parchment-lined tray, about 0.5cm thick, and let it cool slightly.

Once cool enough to handle, roll the paste tightly into a log, then use a knife to slice it into 1cm-thick rounds. Alternatively, score the paste into strips before it fully dries for easier tearing.

Air-dry the rolls for 1–2 days in a well-ventilated area, or bake at 100°C for 1–2 hours until chewy. Store in an airtight container for up to a month. Enjoy this classic snack as a healthy, homemade treat!
