How to Make Savory Mackerel Dumplings

Mackerel dumplings, a beloved coastal delicacy, are prized for their tender fish filling and plump wrapper. Here’s a step-by-step guide to crafting these flavorful dumplings at home.

Ingredients:

- 500g fresh mackerel, deboned and minced

- 200g pork shoulder, finely chopped

- 1 cup chives, finely diced

- 2 tbsp ginger, grated

- 1 tbsp soy sauce

- 1 tsp sesame oil

- Salt and pepper to taste

- Dumpling wrappers (store-bought or homemade)

Steps:

1. Prepare the Filling: Rinse the mackerel, pat dry, and mince finely. Mix with pork, chives, ginger, soy sauce, sesame oil, salt, and pepper. Stir clockwise until the mixture becomes sticky and well combined. Chill for 30 minutes to enhance flavors.

2. Wrap the Dumplings: Place a wrapper in your palm. Add 1 tablespoon of filling in the center. Fold the wrapper in half, pinch the edges to seal, and create pleats for a classic shape. Ensure no air pockets remain to prevent bursting during cooking.

3. Cook the Dumplings: Boil water in a pot. Add dumplings in batches and cook for 3-5 minutes, or until they float. For a crispier texture, pan-fry them: first boil for 2 minutes, then pan-fry in oil until golden brown on both sides.

Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil. These dumplings are perfect for family gatherings or festive celebrations, offering a delightful blend of oceanic richness and savory warmth.
