How to Make Crispy and Delicious Chinese Fried Dough Sticks (Youtiao)

Chinese Fried Dough Sticks, or Youtiao, are a beloved breakfast staple, loved for their golden, crispy exterior and soft, airy interior. Making them at home is simple with this step-by-step guide.

Ingredients: 300g all-purpose flour, 1/2 tsp salt, 1 tsp baking powder, 1/4 tsp baking soda, 200ml warm water, 1 tbsp vegetable oil, extra oil for frying.

Steps:

1. Prepare the dough: In a large bowl, mix flour, salt, baking powder, and baking soda. Gradually add warm water and oil, knead into a smooth dough. Cover and let rest for 1–2 hours until doubled in size.

2. Shape the dough: On a floured surface, roll the dough into a long rectangle (about 1cm thick). Cut it into 2cm-wide strips. Stack two strips, pinch the centers together, and stretch them to 15–20cm long.

3. Deep-fry: Heat oil in a wok to 170–180°C. Gently place the dough sticks into the oil, frying for 3–4 minutes, turning occasionally, until they puff up and turn golden brown.

4. Drain and serve: Remove with a slotted spoon, drain excess oil, and enjoy warm with soy milk or congee.

Tips: Ensure the oil temperature is consistent to avoid uneven cooking. For extra crispiness, fry the dough sticks a second time at higher heat for 30 seconds. Homemade Youtiao are best enjoyed fresh!
