Ingredients:

- 1 cup each of kidney beans, black beans, and chickpeas (canned or pre-soaked dried)

- 1 large onion, diced

- 2 carrots, chopped

- 2 celery stalks, sliced

- 3 cloves garlic, minced

- 6 cups vegetable or chicken broth

- 1 tsp dried thyme

- 1 bay leaf

- Salt and pepper to taste
