Shaanxi Grand Hodgepodge, or "Dashuicai," is a hearty, comforting dish from Northwest China, beloved for its rich flavors and medley of ingredients. Here’s a simple guide to making it at home.

Ingredients:

500 pork belly (cut into cubes), 1 firm tofu (cubed), 1 potato (diced), 1 carrot (sliced), 1 cabbage (chopped), 1 vermicelli (soaked), dried wood ear mushrooms (rehydrated and sliced), soy sauce, cooking wine, salt, pepper, and vegetable oil.

Steps:

1. Prepare the meat: Marinate pork belly with soy sauce and cooking wine for 15 minutes.

2. Stir-fry: Heat oil in a wok, stir-fry pork until browned, then set aside.

3. Sauté veggies: In the same wok, stir-fry carrots, potatoes, and mushrooms until slightly soft. Add cabbage and tofu, cook for 2 minutes.

4. Simmer: Return pork to the wok, add water (just enough to cover ingredients), and bring to a boil. Reduce heat, simmer for 20 minutes until veggies are tender.

5. Thicken: Dissolve starch in a little water, add to the stew to thicken slightly. Season with salt and pepper.

6. Finish: Add vermicelli, cook for 2 more minutes, then serve hot with rice.
