1 kg fresh crayfish, cleaned and deveined; 200g garlic, minced; 50g ginger, sliced; 3-5 dried chilies (adjust to taste); 2 tbsp cooking oil; 1 tbsp light soy sauce; 1 tsp sugar; 1 tbsp Shaoxing wine (optional); chopped green onions for garnish.

Steps:
