How to Make Spicy and Sour Lotus Root Sticks: A Complete Guide

Spicy and sour lotus root sticks (酸辣藕带) are a beloved Chinese appetizer, celebrated for their crisp texture and zesty kick. Here’s a simple yet delicious recipe to recreate this dish at home.

Ingredients:

- Fresh lotus root sticks (300g),

- Dried chili peppers (5-6),

- Garlic (3 cloves, minced),

- Ginger (1 slice, julienned),

- Light soy sauce (1 tbsp),

- Black vinegar (1 tbsp),

- Sugar (1 tsp),

- Salt (to taste),

- Cooking oil (2 tbsp).

Steps:

1. Prep the Lotus Root: Rinse the lotus root sticks and cut into 5cm sections. Soak in vinegar water for 5 minutes to prevent browning, then drain.

2. Stir-Fry Aromatics: Heat oil in a wok over medium fire. Add dried chilies, garlic, and ginger. Stir-fry until fragrant.

3. Cook the Lotus Root: Toss in the lotus root sticks. Stir-fry for 2–3 minutes until slightly tender but still crisp.

4. Season: Add light soy sauce, black vinegar, sugar, and salt. Mix quickly to coat evenly.

5. Finish and Serve: Remove from heat. Let it cool to room temperature before chilling in the fridge for 1 hour. Garnish with sesame oil or extra chilies if desired.

Tips: For extra crunch, blanch the lotus root briefly in boiling water before stir-frying. Adjust spice and sourness to your taste by varying the chili and vinegar amounts. This refreshing dish pairs perfectly with rice or as a side with dim sum. Enjoy the burst of flavors in every bite!
