Golden fish dumplings, or "jinyu zhengjiao" in Chinese, are not only delicious but also visually stunning, resembling swimming fish with their vibrant colors and intricate details. Here’s a simple guide to crafting this delightful dish.

### Ingredients

For the dumpling skin: 200g all-purpose flour, 80ml warm water, pinch of salt.

For the filling: 150g ground pork (or shrimp), 2 chopped shiitake mushrooms, 1 tbsp soy sauce, 1 tsp sesame oil, salt, pepper, and 1 chopped scallion.

For garnish: Carrot slices (for fins/tail), black sesame seeds (for eyes), and edible red food coloring (optional).

### Instructions

1. Prepare the dough: Mix flour, salt, and warm water into a smooth dough. Knead for 5 minutes, then cover and rest for 30 minutes.

2. Make the filling: Combine all filling ingredients in a bowl. Mix well and chill for 10 minutes.

3. Shape the dumplings:

- Roll the dough into thin logs, then cut into small pieces. Flatten each into a 8cm circle.

- Place 1 tbsp filling in the center. Fold the dough into a half-moon, pinch the edges to seal.

- Shape the "fish": Gently press one end to form a tail. Use a knife to cut slits on the tail for fins. Carve a small slit on the head for the mouth.

- Attach carrot slices as fins/tail and black sesame seeds as eyes. Use a toothpick to dab red food coloring on the "cheeks" for a lifelike touch.

4. Steam: Place dumplings on a greased steamer basket. Steam over high heat for 10-12 minutes until cooked through.
