How to Make Ginger Milk Curd: A Simple Guide

Ginger milk curd, a silky Cantonese dessert, charms with its smooth texture and spicy-sweet balance. Here’s a failproof method to create this delightful treat at home.

Ingredients: 500ml full-fat milk (fresh, not UHT), 3 tbsp ginger juice (from 100g fresh ginger), 1 tbsp sugar (adjust to taste), a pinch of salt.

Steps:

1. Prepare Ginger Juice: Peel and grate ginger, then squeeze juice through a cheesecloth. Set aside (use immediately for best results).

2. Heat Milk: Gently warm milk in a saucepan over low heat until steaming (70–80°C). Do not boil. Stir in sugar and salt until dissolved. Let cool for 5 minutes.
