A Comprehensive Guide to Making Classic Madeleines

Madeleines, the delicate, shell-shaped French pastries, are beloved for their buttery aroma and tender crumb. Here’s a detailed guide to crafting these timeless treats.

Ingredients:

- 100g all-purpose flour

- 100g unsalted butter, melted

- 2 large eggs

- 80g granulated sugar

- 1 tsp vanilla extract

- Pinch of salt

- Optional: Lemon zest or almond extract for flavor

Steps:

1. Preheat & Prepare: Preheat the oven to 200°C (400°F). Grease and flour a madeleine pan (or use butter and flour, then chill to prevent sticking).

2. Mix Wet Ingredients: Whisk eggs and sugar until thick and pale (about 3-5 minutes). Add melted butter, vanilla, and zest (if using); blend well.

3. Combine Dry & Wet: Sift flour and salt into the wet mixture. Gently fold until just combined—overmixing causes toughness.

4. Rest the Batter: Chill the batter for at least 1 hour (or overnight for deeper flavor). This step is crucial for the iconic hump.

5. Bake: Fill each shell cavity 2/3 full. Bake for 8-10 minutes until edges are golden and centers spring back.

6. Cool: Remove from pan and cool on a rack. Dust with powdered sugar before serving.

Tips:

- For a crispier shell, bake at 200°C for the first 5 minutes, then reduce to 180°C.

- Variations: Add cocoa powder for chocolate madeleines or replace vanilla with orange zest.

Enjoy these perfect with afternoon tea or as a sweet snack!
