Dadian Shaobing, a savory Beijing snack, features crispy, pan-fried dough stuffed with juicy meat and vegetables. Here’s a simple guide to making this beloved treat.
Ingredients: For the dough, mix 2 cups all-purpose flour, ¾ cup warm water, and a pinch of salt into a smooth ball; let it rest for 30 minutes. For the filling, combine 200g ground pork (or beef), 4 chopped wood ear mushrooms, 2 shredded cabbage, 1 tbsp soy sauce, 1 tsp sesame oil, salt, and pepper.
Steps:
1. Knead & Roll: Divide the dough into 12 small balls. Roll each into a 3-inch circle, keeping the center thicker than the edges.
2. Fill & Fold: Place 1 tbsp filling in the center, fold the dough in half, and seal the edges by crimping them with a fork.
3. Pan-Fry: Heat 2 tbsp oil in a skillet over medium heat. Cook the pastries for 3–4 minutes per side until golden brown.
4. Steam (Optional): For extra tenderness, add 2 tbsp water to the skillet, cover, and steam for 2 minutes before serving.
Serve hot with soy-vinegar dipping sauce. These crispy, flavorful pastries are perfect as a snack or light meal!
