I like to eat cured meat. When I was a child, I could only eat cured meat in winter. The bacon I made at home was very fragrant, but unfortunately I can't eat it now, and I can't make it myself. Because the sunshine in California is so bright, the meat will dry in 2-3 days after hanging out. My mother said that the cured bacon must be slowly air-dried to have cured flavor.
