How to Cook Stir-Fried Shrimp with Winter Melon

Stir-fried shrimp with winter melon is a quick, healthy, and delicious dish that balances flavors and textures. Here’s a simple step-by-step guide to make it at home.

Ingredients:

- 200g fresh shrimp, peeled and deveined

- 300g winter melon, peeled and sliced into 0.5cm thick pieces

- 2 cloves garlic, minced

- 1 tbsp cooking oil

- 1 tsp soy sauce

- ½ tsp salt (or to taste)

- ¼ tsp white pepper

- 1 tbsp water (optional, for steaming)

Steps:

1. Prep the ingredients: Rinse the shrimp and pat dry. Slice the winter melon into uniform pieces for even cooking. Mince the garlic.

2. Sauté the aromatics: Heat oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until fragrant (about 10 seconds).

3. Cook the shrimp: Add the shrimp to the wok. Stir-fry for 1–2 minutes until they turn pink and opaque. Remove the shrimp and set aside.

4. Stir-fry the winter melon: Return the wok to heat. Add the winter melon slices and stir-fry for 2–3 minutes. If the melon is too dry, add 1 tbsp water to help it soften.

5. Combine and season: Return the shrimp to the wok. Add soy sauce, salt, and white pepper. Stir well to coat everything evenly. Cook for another 1–2 minutes until the melon is tender-crisp.

6. Serve: Transfer to a plate and enjoy hot with steamed rice.

This dish is light yet satisfying, with the sweetness of winter melon complementing the savory shrimp. It’s perfect for a quick weeknight meal!
